I saw these delights awhile back on Pinterest and knew I had to be making me some of them! I call them Jello Shots - The Upgrade. I always hate trying to get the 'normal' jello shots out of those tiny cups and still try to maintain some semblance of dignity. Okay...who laughed...? I am all about having dignity when I'm gettin' my drink on!! So, I love the jello shot concept, it's just the execution of slurping it that leaves me dry. These jello shots were awesome! Mine are the two top photos. The ones I saw on Pinterest is the bottom photo. They must have had a better technique for cutting theirs. They are so perfectly cubed. Mine were fine enough and weren't sitting right beside this photo, so everyone was suitably impressed. I used vanilla rum as the alcohol in mine. The original recipe called for making several different colors/flavors of jello and spiking them with vodka or rum, but I cheated because I just didn't have the patience to make all those different batches of jello. Instead, I purchased pre-made Jello tubs in 4 different colors at the grocery store and cut them into tiny cubes and I spiked the white part of the shot instead. It worked beautifully and I got them all done a lot quicker that way. The vanilla rum was great in the white sweetened condensed milk 'gello', but next time I'll probably choose a rum that has a higher alcohol volume. They were actually not quite strong enough. I will definitely be playing with that recipe again!
